Goat Cheese Salads, they make it easy here, deux, …

For years, I have been making goat cheese salads at home. Preparing the tasty bed of greens, lightly dressed is easy enough. But preparing the crunchy, savory fromage topping is a little more challenging.
There are many different ways to do this. I usually sauté slices of baguettes in olive oil until crispy and golden brown, that’s the easy part.
What’s more difficult is preparing the goat cheese. I like to sauté medallions of the goat cheese in olive oil until the exterior is just golden brown and then slide them onto the baguette slices {desperately trying to keep them “whole”).  It can be tricky and time consuming, but it is so delicious.
So, look what I found, whilst walking through the cheese department at the Super U in Beaulieu~sur~mer the other day.

Really? It’s that simple?
Yes, it is… here.
I tossed a few handfuls of Mache and Rocquette together along with some olive oil, salt and pepper. Then browned these lovely little croustillants in olive oil for about 2 minutes on each side.

In under 10 minutes, I had completed a perfect little starter salad for my party of four. Crunchy, golden brown packets of warm, soft goat cheese on top of lightly dressed, fresh greens,

perfection.

    *** Just saw this… looks SOOO YUMMY!!! I don't "cook" much anymore… hubby does THAT… but I DO "do the salad" nightly, and am looking forward to preparing this … THANKS!!!

    Emily, Love this! Oh, I wish I could find these in our markets at home. Maybe you should start a business importing all these goodies when you return. The former Tully's in Madison Park is vacant and looking for someone to lease it and turn it in to something fantastic. Just think of all of your wonderful French finds coming to life in our neighborhood. People would love it! I'm going to be wishing I could have one of those salads come lunch time! XO
