Fried Goat Cheese Medallions

A Splendid Companionship

These goat cheese medallions, crunchy on the outside and melty and tender on the inside, are delightful on a flavorful crostini cracker.

Top it with a Pimientos De Padrón and and they are truly the spice of life. The best part is that they take only minutes to prepare.

Ingredients
makes 12
1 -11 ounce log of goat cheese, well chilled
3 tablespoons bread crumbs
3 tablespoons olive oil
12 favorite crackers

We like the rustic fruit and nut crostinis from Anjou Bakery available at Whole Foods. These can be broken into 3’s and are a delicious base for the prepared cheese medallions.

Preparation
Slice goat cheese log into 1 inch medallions.

Press into bread crumbs to cover.

Heat olive oil to medium high in medium to large saute pan.

Place medallions in olive oil when it is hot.

Brown on one side (2-3 minutes), then turn medallions over and brown the other side.
Remove from heat and place on crackers.

Nice when served with a batch of Pimientos de Padron and a cold glass of Vinho Verde.
